Grilled San Simon cheese
We use the well-known cheese of D.O. San Simón da Costa, a cheese made of milk that comes from Galician Blond, Pardo-Alpina and Friesian cows with its characteristic smoking process with birch wood. High heat searing on the grill gives it a more pronounced creaminess that enhances the smoky notes. It is served with a citrus gel to give it a more balanced mouthfeel.
